Easy Mini King Cakes
These Easy Mini King Cakes are a breeze to make, yet very impressive and fun! With Mardi Gras right around the corner, I was inspired to create an easy recipe for this time-honored cake. A two-ingredient cinnamon flavor filling and I used heated store-bought icing and sprinkles for a quick decoration. Don’t forget your little babies! Find out what the colors represent on a king cake.
Enchanted Forest Cupcakes
These Enchanted Forest Cupcakes are easy to make, yet impressive and delicious. Starting with a box cake mix and elevating the flavor with Nature’s Flavors Organic Strawberry Syrup elevated this dessert to AMAZING! Decorated with marshmallows, (mushroom stumps and rocks) fresh strawberries (mushroom caps) and green-colored flaked coconut (moss.) Perfect for a fairy party dessert!
Kentucky Bourbon Balls
These no-bake Kentucky Bourbon Balls would be the perfect Kentucky derby party dessert. They are dairy-free, vegan and gluten-free which makes them friendly for pretty much any guest. The taste is so amazing you can’t tell that these are a much healthier version made with pecans, vanilla protein powder, milled flax seeds, plant butter and sweetened with pure maple syrup. Makes 26 servings.
DIY Easter Chocolates
One of my favorite candy bars is a Take Five, which consists of peanuts, caramel, pretzels and peanut butter all covered in chocolate. That was the inspiration for these DIY Easter Chocolates. I found some fun Easter silicone molds to use but you can also just use a muffin tin with paper liners or any mold you might have. So, I made more of a smaller candy bar bite, perfect to gift giving (or enjoying yourself!) This recipe is very simple, yet impressive.
Arkansas Travelers Peanut Butter Cookies
This recipe for gluten-free Arkansas Travelers Peanut Butter Cookies was inspired by a few different things. The first time I discovered this recipe (in its original form) was in my grandmother’s very old recipe scrap book. I wanted to create a healthier version that was gluten-free with less sugar. These cookies are named after the MiLB baseball team out of Little Rock Arkansas, where my husband’s family is from.
Dairy-Free Tiramisu Chocolate Mousse
This Dairy-Free Tiramisu Chocolate Mousse was inspired by my love of tiramisu and chocolate. Light and smooth chocolate mousse, topped with a dairy-free cream cheese alternative with added rum flavor extract and honey, sprinkled with dark chocolate shavings. What better way to round out this decadent indulgence but with a strawberry compote made with a splash of marsala wine nestled in at the bottom. Layers of luscious flavors that would be perfect for Valentine’s or any special occasion.
Peppermint Bark
It just wouldn’t be Christmas without Peppermint Bark. This classic candy has long been part of holiday celebrations and with good reason. Rich, decadent chocolate and the cool fresh flavor of peppermint intermingle for a delicious taste of the season. This is an easy-to-make recipe that can be whipped up in no time for a perfect party treat or gift.
Nannie’s Persimmon Pudding
Nannie’s Persimmon Pudding is my favorite, because it really allows the persimmons to be the star of the show, no added spices. This caramelized and sweet soggy style of Persimmon Pudding is what we grew up eating in North Carolina each fall and it evokes fond memories of enjoying them freshly fallen from the trees on a warm autumn afternoon. Vintage recipe.
Grandma’s Persimmon Pudding
My Grandma’s Persimmon Pudding is a vintage classic and southern style, beloved in our family. This caramelized and sweet soggy style of Persimmon Pudding is what we grew up eating in North Carolina and the added fall spices give this classic vintage recipe a kiss of fall. Easy to make with simple ingredients.
Candy Corn Banana Pudding Trifle
My Dairy-Free Candy Corn Banana Pudding Trifle keeps the beauty of the trio of candy corn colors with a great combination of flavors. Vanilla pudding, fresh bananas, soft orange cake and dairy-free whipped topping all join together to make this a delicious Halloween party food without using actual candy corn.
Fudge Oatmeal Drop Cookies
These Fudge Oatmeal Cookies go by several names. Some people know them as no-bake cookies, others refer them by drop cookies or stovetop cookies. They are quick and easy to make and yield a very delicious cookie with a peanut butter and chocolate fudge taste, along with a slight chewy bite, but melts in your mouth. I adapted my grandmother’s recipe into a dairy-free version that tastes exactly like I remember. A vintage and nostalgic recipe.
Kentucky Derby Pecan Pie
This Kentucky Derby pie is a scrumptious trio, rich with chocolate, pecans and Kentucky bourbon. Super easy to make and serve for your Kentucky Derby party, or any special occasion.
Carrot Cake
This is a healthier version of carrot cake, made from scratch, using whole wheat flour, shredded carrots, and ground walnuts. It's full of flavor and spices and packed with goodness from the veggies and nuts! Topped with a delicious cream cheese frosting sweetened with honey and orange juice. Also, instructions for the marzipan carrots are provided for an extra special touch.
