The inspiration for the Sweet Potato Smoothie is my favorite super food vegetable, the Sweet Potato. Baking up sweet potatoes about every week is a habit for me. A GOOD habit, I should say! They have amazing health benefits…not to mention, just down right delicious. Sweet potatoes are are an anti-inflammatory vegetable that is heart healthy and rich in antioxidants and vitamin A to help boost immunity. They are full of healthy carbs for fueling your busy day, (great for brain food also!) They are beneficial for your eyes, and have also been shown to aid with anxiety, easing stress and reducing mood disturbances.

Even though I thoroughly enjoy them baked plain, I try to find different ways to include them in my diet. This Sweet Potato Smoothie is a great way to drink them up! It’s smooth, creamy and naturally sweetened with wholesome and nutritious ingredients. It took almost two batches of baked sweet potatoes and a lot of delicious attempts to create this recipe. I hope you enjoy it, feel free to leave a comment or adjust ingredients to your liking.

Ingredients:

  • 1 frozen banana

  • 1/2 cup sweet potatoes, cooked and mashed (see recipe HERE)

  • Juice from 1/2 large naval orange (about 1/4 cup)

  • 1 tbsp maple syrup

  • 1 tbsp creamy peanut butter

  • 1/2 cup unsweetened vanilla almond milk

  • 1/4 tsp allspice

  • 4-5 cubes of ice

How to make a sweet potato smoothie

Instructions:

Add all ingredients to a smoothie cup, in order listed, making sure ice is the last thing added.

If using a blender, add ice first.

Use smoothie setting to blend. If using blender, pulse a few times, then blend on high for one minute.

Pour into a glass or cup and enjoy. If desired, sprinkle with a dash of nutmeg or clove on top.

It’s the perfect sip on a warm autumn day, very creamy and healthy.

Notes

NOTE: I am lactose intolerant, that is why I choose to create a dairy-free version, but if you would like to use real dairy ingredients you can (equal substitution amounts.)
