Baked Sweet Potatoes
When baked, the natural sweetness emerges and it’s full of nutrients and benefits. The texture turns creamy and it's sweet enough to enjoy on it's own. It’s quite simple to bake sweet potatoes, and if you aren’t consuming this super food in your regular diet, you should consider adding them in. Sweet potatoes are are an anti-inflammatory vegetable that is heart healthy and rich in antioxidants and vitamin A to help boost immunity.

Sweet Potato Casserole w/Pecan Topping
Using dairy-free ingredients, I made a creamy and fluffy soufflé like filling, with warm fall spices that includes my favorite super food, sweet potatoes, and topped it off with a crunchy, sweet and salty pecan topping with a hint of sage and orange zest. This Sweet Potato Casserole is the perfect fall side that completes a Thanksgiving meal. Serves 10-12. Can easily be put together the day before, refrigerated and then baked on the big day.
Butternut Squash Sage Biscuits
These Butternut Squash Sage Biscuits are a slightly sweet biscuit, very moist with a hint of savory sage. I think it’s a great accompaniment to a savory meal such as chili or ham to balance your taste palate. This rustic recipe is adapted from an 18th century Charlottesville, VA recipe for sweet potato biscuits. I adjusted the shortening amount and added some plant butter…and of course used butternut squash alongside ground sage. This recipe makes sixteen 2 ½ inch diameter sized biscuits. Spicy Cauliflower Bites
These Spicy Cauliflower Bites are full of flavor thanks to a few easy additions and especially the BOLD Blue Diamond Habanero BBQ Almonds used. Another healthy aspect are that these tasty treats are baked, not fried, and still have a great crunch that a lot of people crave for their snacks. This is also a healthy side option for a meal, instead of fried squash, zucchini or okra, (which you could also dip and bake with this same recipe.)
