It’s an all-in-one smoothie that has your veggie, fruit and protein. The real pumpkin and peanut butter team up to create a meal that satisfies your appetite and cravings while providing you with a high-protein pick-me-up that will get you through those graveyard shifts or a long night. Plus, it’s spooky enough for Halloween night! In this post, I’ll show you how to make a graveyard shift smoothie that’s delicious, nutritious, and Halloween-appropriate. Makes 24 ounces.

Ingredients for pumpkin peanut butter smoothie

Ingredients:

Ingredients to make a pumpkin peanut butter coffee smoothie for the grave yard shift or afternoon pick me up healthy meal replacement.
  • 1 medium banana

  • 1 cup pumpkin puree

  • 2 tbsp creamy peanut butter

  • 2 tbsp plant protein powder (your choice, chocolate or vanilla both works great!)

  • 1/2 cup unsweetened vanilla almondmilk

  • 3/4 cup brewed and cooled coffee (your choice on how strong!)

  • 1/2 tbsp pure maple syrup

Optional: 1 tsp pumpkin spice (for an extra pumpkin pie flavor kick!)

Note: Use a frozen banana for a thicker smoothie.

How to make a pumpkin peanut butter coffee smoothie

Instructions:

Vitamix blender with ingredients inside to make a pumpkin peanut butter coffee smoothie for fall.

Add all ingredients to a blender or smoothie cup. Pulse a few times or start on low, then increase speed to high and blend for at least 1 minute or until creamy and smooth.

Note: Blender and smoothie makers can have different instructions on loading ingredient types (example: My Vitamix blender recommends loading liquids first, then ending with frozen ingredients.) Read recommended instructions for loading your particular blender or smoothie maker for optimal performance and a smooth outcome.

Pour into serving glass and if desired, drizzle with extra peanut butter or dust with pumpkin pie spice. Enjoy!

I honestly enjoy this pumpkin smoothie year round! I just love the convivence of using canned pumpkin which contains lots of vitamins, minerals and antioxidants to boost your immune system and more. There’s really nothing spooky about this delicious smoothie!

What plant protein powder brand is the best to use for smoothies? I've tested lots of plant protein powders in smoothies and in my opinion for chocolate I prefer using Earth Chimp organic vegan protein shake mix and for vanilla I like Aloha organic protein powder the best. The flavor and texture of both of these brands are great!
