Iced Coffee Latte Popsicle (dairy-free recipe)

How to make your own iced coffee popsicles with just a few simple ingredients and customize flavor variations for the best summertime low calorie frozen treat with a caffeine boost that is dairy free and vegan.

Ingredients
  

  • 1 1/4 cup coffee cooled (or you can buy black unsweet cold brew in your favorite brand)
  • 1 1/4 cup milk of choice I used coconut milk, almondmilk works great also
  • 1/4 cup coffee creamer of choice I used Silk dairy-free almond creamer in caramel flavor and you can adjust sweetness to your liking

Instructions
 

  • You can add all ingredients to a 3 cup measuring cup and stir together. Carefully pour coffee mixture into popsicle molds, leaving about 1/2 inch to spare at top. Place top on mold and insert popsicle sticks.
  • Place in freezer for at least 4 hours or overnight.
  • To unmold popsicles: Run bottom part of silicone popsicle mold under warm (not hot) water for about 30 seconds, then remove lid and gently lift popsicle out while pushing up on bottom of mold. Enjoy immediately or place popsicles in freezer bags and store in freezer until desired. (Best enjoyed within 4 weeks.)
