Easy Microwave Chocolate Peppermint Fudge

Easy to make microwave chocolate peppermint fudge made with instant Jell-O pudding mix and perfect for holiday party dessert or gifting to family, friends or neighbors.

Ingredients
  

  • 4 oz white baking chocolate
  • 4 oz semi sweet baking chocolate
  • 6 tbsp butter
  • 1/3 cup water
  • 3/4 tsp peppermint extract
  • 3.9 oz Jell-O chocolate fudge instant pudding mix
  • 3 cups powdered sugar
  • Optional garnish: festive sprinkles Andes peppermint crunch baking chips or crushed peppermint candies.

Instructions
 

  • Prepare an 8-inch square pan by lining it with parchment paper, making sure to leave some overhang on the sides to help with lifting fudge out when ready.
  • In a large microwave safe bowl, add both chocolates, butter and water and cook in microwave on high for 2 minutes. Remove and add peppermint extract, then whisk until smooth. Add entire package of pudding mix and use an electric mixer (or fork) to mix until well blended. Next, add powdered sugar, 1 cup at a time, mixing after each addition until well blended. Press mixture evenly into bottom of prepared pan. Top with festive sprinkles or peppermint bits and refrigerate for at least 2 hours. Use parchment paper to lift fudge out of pan and then cut info desired sized squares. (I made 36 1 ΒΌ inch squares)
