Salsa Crockpot Chicken Inspiration

Spice up your dinner routine with a simple, yet flavorful recipe for crockpot chicken tacos using salsa! When I’m exhausted and do not have the energy to put together a big meal, this recipe is the best. This recipe for salsa chicken tacos is my all time “go-to” recipe for a super easy crockpot supper the whole family loves. Easy on the wallet, easy on the cook.

Only three simple ingredients to create the taco filling, then just add to taco vessel of choice and top anyway you like! Add a few simple sides like Spanish rice and black or refried beans and whip up some guacamole and you’ve got a complete meal! This would also make a great dinner idea for Cinco de Mayo.

Ingredients to make crockpot chicken tacos

Ingredients:

Three simple ingredients to make crockpot salsa chicken.
  • 2-3 big boneless chicken breasts

  • 1 taco kit with taco seasoning and shells (note: photo is wrong, I accidently got just shells)

  • 1 jar salsa (I used a 16 oz jar of Green Mountain Gringo Salsa, Medium, my favorite!)

Note: Photo is wrong, I meant to buy a taco kit with the seasoning and shells, but luckily I had an extra seasoning packet in my pantry.

Place the boneless chicken breasts into the bottom of your crockpot.

Dump the entire packet of taco seasoning on top of the chicken breasts.

…then pour the entire jar of salsa over top of the chicken.

Setting crockpot to cook on 4 hours at high heat for salsa crockpot chicken.

Put lid on and set your crockpot to whichever time period you want. You really can’t go wrong. I usually start at lunch time and set for 4 hours on high, but if you want it to cook all day while you are working, set on 8 hours low.

After chicken if finished cooking, open lid and use two forks to pull apart meat until shredded into the size you want. Let the shredded chicken soak in the juices for 5 or 10 minutes more while cooling down to serving temperature.

Serve in a soft flour tortilla or crispy corn shells, or perhaps no vessel at all. Sometimes I like to eat without a shell, but rather with a side of lettuce, chopped tomatoes, guacamole and Greek yogurt (a great substitute for sour cream.)

This is a delicious and easy idea for a Cinco de Mayo party food.

This cheap and easy dinner is so flavorful and fulfilling, a true winner winner chicken dinner!

How to make salsa crockpot chicken tacos
  1. Add chicken breasts to bottom of crockpot.
  2. Evenly add entire packet of taco seasoning on top of chicken.
  3. Top chicken with entire jar of salsa.
  4. Cook on high for 4-6 hours, or on low for 8 hours.
  5. After cook time is up, use two forks to shred chicken.
  6. Let shredded chicken soak in juices for 5-10 minutes while cooling down to serving temperature.
  7. Serve in hard or soft shells with desired toppings.

Notes

Can I cook this salsa chicken recipe for 8 hours? Yes! You can start this recipe for crockpot chicken tacos in the morning and cook on low for 8 hours.

Storage: Store leftover salsa chicken in airtight container in refrigerator for up to two days.

Tip: Adjust the heat and flavor with different types of salsas. Choose hot for more spicy heat or perhaps choose a chipotle or pineapple salsa for a different flavor twist.
