With just a few simple ingredients, including rotisserie chicken, fresh carrots and celery, and shallots, you can create a comforting and satisfying meal in no time. Easy Bone Broth Chicken Gnocchi Soup

- Prep your ingredients ahead of starting to cook. Chop your shallots, carrots, celery and chicken. Measure out your spices and add to one small cup or bowl. Measure out your liquids and stir together.
- Add butter to large sauce pot and turn to medium-high heat. Add shallots and spices (garlic, thyme, salt and pepper.)
- Stirring frequently, cook the shallots (or onions) until they turn translucent then brown slightly and very fragrant. This takes about 5-8 minutes.
- Carefully add bone broth, coconut milk and lemon juice and stir together.
- Start cooking the gnocchi in another pot according to package directions (it’s super easy!)
- Next, add celery, carrots and chicken to soup mixture. Stir, then bring to a boil. Reduce to a simmer and cook, uncovered, for 15 minutes or until carrots are tender.
- Remove from heat and add cooked gnocchi. Soup is ready to serve immediately.
Notes
TIP: Don’t skip the fresh lemon juice! Lemon juice adds the perfect acidic balance and brightens the flavors for a delicious and cozy dinner experience.
NOTE: I am lactose intolerant, that is why I choose to create a dairy-free version, but if you would like to use real dairy ingredients you can (equal substitution amounts) however it may alter the nutritional values.
