Pecan Pie Energy Bites

I recently came across a post on Instagram that said, “My favorite childhood memory is having ENERGY” I said a big “AMEN!” to that. It’s so true, we can all relate to that. Over the years, I have definitely learned that what I put into my body, determines how I feel and the energy I have.

What are in pecan pie energy bites?

These Pecan Pie Energy Bites not only taste great, but they can give you a little extra boost to help fuel your day. They are made from whole, healthy ingredients: dates, pecans, coconut, flax seeds and a little cinnamon, coconut oil and sea salt. Why did I name them “Pecan Pie” energy bites? Well, they are very reminiscent of pecan pie, a little sweet/salty mix…and if anything, just saying that you are eating something with “Pecan Pie” in the name, will make you feel like you're indulging in a decadent treat! …but I really challenge you to decide for yourself😉 This recipe makes a batch of 15-17 tablespoon scoop sized balls.

The science behind it:

Dates are high in natural sugars that give fuel to your body from the simple carbohydrates for high-energy activities. Coconuts are a very versatile and nutritious fruit, (not to mention, tasty!) In raw state, they are very low in sugar and carbs, but their healthy fat will sustain you. Pecans are a happy trifecta of fiber, protein and healthy fats that give this snack the perfect crunch factor and help to sustain you and keep you going like the energizer bunny! Cinnamon gives this treat a warm, spicy taste, while helping to control blood sugar levels.

How to make pecan pie energy bites

Ingredients:

  • 1 cup pecans

  • 1 cup raw (or unsweetened) grated

    coconut

  • 10 dates, pitted

  • 1/4 cup milled flax seeds

  • 2 tsp coconut oil

  • 1 tsp ground cinnamon

  • 1/4 tsp sea salt

Instructions:

Combine all ingredients in a blender or food processor on high for 1-2 minutes, occasionally stopping to scrap down sides.

Everything should be finely chopped, (as shown in photo.)

Use a rounded tablespoon to scoop out even portion sizes and squeeze and shape into balls. (These don’t roll together, that’s why I am saying to squeeze them…you’ll see!)

Place on a plate lined with parchment or waxed paper and put in the freezer for 15-20 minutes to firm up.

Now, transfer bites into a plastic bag or airtight container and refrigerate until needed. They will keep up to 1 month in the fridge, or 6 months in the freezer.

  2. Blend until finely chopped and well combined.
  3. Scoop tablespoon sized portions and squeeze and shape into a ball.
  4. Place bites on a plate lined with parchment or waxed paper and put in the freezer for 15-20 minutes until firm.
  5. Transfer to airtight container or baggie and refrigerate until needed.

Notes

Bites will keep in fridge for up to 1 month and freezer for up to 6 months.
