Pecan Pie Energy Bites

These Pecan Pie Energy Bites not only taste great, but they can give you a little extra boost to help fuel your day. They are made from whole, healthy ingredients: dates, pecans, coconut, flax seeds and a little cinnamon, coconut oil and sea salt. This recipe makes a batch of 15-17 tablespoon scoop sized balls.

Ingredients
  

  • 1 cup pecans
  • 1 cup raw coconut
  • 10 dates pitted
  • 1/4 cup milled flax seeds
  • 2 tsp coconut oil
  • 1 tsp ground cinnamon
  • 1/4 tsp sea salt

Instructions
 

  • Combine all ingredients in a blender or food processor on high for 1-2 minutes, occasionally stopping to scrap down sides.
  • Blend until finely chopped and well combined.
  • Scoop tablespoon sized portions and squeeze and shape into a ball.
  • Place bites on a plate lined with parchment or waxed paper and put in the freezer for 15-20 minutes until firm.
  • Transfer to airtight container or baggie and refrigerate until needed.
