Fun and delicious homemade popsicles in 80’s popular drink flavors. Learn how to make these Miami Vice popsicles with pina colada and strawberry daquiri flavors.

The inspiration for these fun 80’s theme Miami Vice Popsicles all started with a trip to our local Pelican’s SnoBalls stand. They always have some clever and creative flavors and I’m pretty adventurous when trying new things. As I scanned through the dozens of flavors, there was a dual flavored sno-cone called “Miami Vice” that I just had to try. It used pina colada and strawberry daquiri syrups, which were two of the most popular cocktail flavors in the 1980’s.

After trying, I was completely hooked on the delicious combination and fun name (and memories of crushing on the handsome Don Johnson “a.k.a. Sonny” when I was young!) I knew I had to make a fun frozen summer treat with those flavors, so I created these dual-flavored and dual-colored homemade popsicles that are bursting with fresh fruit and 80’s flavor. By the way, after trying my sno-cone, my husband was completely hooked on that flavor combo…and he now is hooked on my popsicles! I also gave them an extra healthy addition by adding some unflavored liquid probiotics (optional) from Mary Ruth’s. My easy recipe makes 10 popsicles.

For the Pina Colada and Strawberry flavors I used Nature’s Flavors Organic flavor syrups. They are vegan and gluten-free and free from corn syrup. Find these flavors and a huge variety of other flavors HERE.

How to make Miami Vice popsicles

Ingredients:

For the Pina Colada layer:

You will also need a popsicle mold and sticks. I have found that this silicone one found on Amazon works very well: FIND IT HERE

For the strawberry daquiri layer:

  • 1/2 cup chopped strawberries

  • 1 cup filtered water or coconut water

  • 1/4 cup Nature’s Flavors Organic Strawberry Syrup

  • 2 tbsp lime juice, fresh or bottled (at the time I did not have any fresh limes, so I used some key lime juice I had in the fridge.)

Instructions:

Evenly distribute pineapple in bottom of each popsicle mold.

Next, stir together the coconut water, flavor syrup and probiotic drops (if you are using.) Pour mixture into each mold, filling half full, then place popsicle mold in freezer for at least 2 hours before starting next step.

Remove popsicle mold from freezer and evenly distribute chopped strawberries to each mold. stir together water, flavor syrup and lime juice then pour mixture into each mold, filling till 1/4 inch to top.

A pour spout measuring cup like the one shown in photo works great for filling the popsicle molds.

Place lid on popsicle mold and insert popsicle sticks. Place in freezer for another 2-3 hours before enjoying.

How to unmold popsicles:

This silicone mold makes removing the popsicles a breeze. Just push up from the bottom and slide them out! However, if using a plastic or tin mold you can set out for a few minutes before unmolding, or set mold in a container filled with warm, NOT HOT, water for 15-20 seconds and they should easily unmold.

These Miami Vice Popsicles are beautiful with the chopped fruit and vibrant colors. They would be great to serve at a pool party, luau, or 80’s party.

I tilted my popsicle mold slightly during the freezing of first layer to give it a little asymmetrical look, but that is “totally” optional.

NOTE: The flavor syrups work best for achieving the perfect cocktail flavors. However, if you cannot acquire the flavor syrups, you can substitute the pina colada with pineapple juice and maybe use a strawberry flavored sports drink or Hawiian Punch for the daiquiri layer.

How long do Miami Vice homemade popsicles last in freezer?

In our house, not long! Haha, but seriously, they should be safe to eat for up to 3-4 months, but they may start to lose their flavor and texture after 2-3 months. Trust me, they probably won’t even last 1 week in the freezer because they are irresistibly delicious.
