Miami Vice Popsicles (vegan, gluten free)

These Miami Vice Popsicles are a fun frozen summer treat with dual-flavored and dual-colored 80's flare that are bursting with fresh fruit and delicious flavor. These fun popsicles would be perfect for a pool party, luau or 80's party.

Ingredients
  

  • 1/2 cup chopped pineapple
  • 1 1/4 cup coconut water
  • 2 tbsp Nature’s Flavors Organic Pina Colada Flavor Syrup
  • 1/2 tsp Mary Ruth’s Organic Liquid Probiotic optional
  • 1/2 cup chopped strawberries
  • 1 cup filtered water or coconut water
  • 1/4 cup Nature’s Flavors Organic Strawberry Syrup
  • 2 tbsp lime juice fresh or bottled (at the time I did not have any fresh limes, so I used some key lime juice I had in the fridge.)

Instructions
 

  • Evenly distribute pineapple in bottom of each popsicle mold.
  • Next, stir together the coconut water, flavor syrup and probiotic drops (if you are using.) Pour mixture into each mold, filling half full, then place popsicle mold in freezer for at least 2 hours before starting next step.
  • Remove popsicle mold from freezer and evenly distribute chopped strawberries to each mold. stir together water, flavor syrup and lime juice then pour mixture into each mold, filling till 1/4 inch to top.
  • Place lid on popsicle mold and insert popsicle sticks. Place in freezer for another 2-3 hours before enjoying.
  • How to unmold popsicles: A silicone mold makes removing the popsicles a breeze. Just push up from the bottom and slide them out! However, if using a plastic or tin mold you can set out for a few minutes before unmolding, or set mold in a container filled with warm, NOT HOT, water for 15-20 seconds and they should easily unmold.
