With summer here, along with the hot and humid days lately in North Carolina, I’ve looking for ways to beat the heat and indulge in a refreshing treat. I wanted to satisfy my sweet tooth while also nourishing my body. Inspiration struck for a healthy, dairy-free recipe for blueberry vanilla yogurt swirl popsicles. These dairy-free, frozen delights are the perfect blend of sweetness and nutrition, providing a guilt-free way to cool down on a hot day.

Bursting with tangy blueberries and creamy vanilla yogurt, these popsicles are a simple and delicious way to stay cool and healthy this summer. So grab your popsicle molds and get ready to learn how to make this scrumptious frozen treat that will have you saying, "More please!" I found some unique swirl silicone popsicle molds that really fancy this frozen treat up at the local Homegoods store. Makes 6 regular sized popsicles.

Ingredients to make blueberry yogurt popsicles

  • 1/2 cup unsweet vanilla almond milk (I used Silk brand)

  • 1 cup dairy-free unsweetened vanilla coconutmilk yogurt alternative (I used So Delicious brand)

  • 1 cup blueberries (fresh or frozen)

  • 3-5 frozen pineapple chunks (to sweeten naturally)

Only four simple ingredients! Adjust amount of pineapple chunks to sweetened to your liking. (You can taste and add more if needed before pouring in molds.)

Optional: Use some extra dairy-free yogurt to dollop in molds for a marbled or swirl effect.

How to make homemade blueberry popsicles

Add all ingredients to a blender or smoothie maker. Start by pulsing a few times, then blend on high for at least 1 minute or until smooth and creamy. Hint: This also makes a delicious smoothie!

Carefully pour popsicle mixture into silicone popsicle mold, leaving at least 1/4 to 1/2 inch gap at top for expansion when mixture freezes. If desired, fill 1/4 of the mold with mixture, then dollop some dairy-free yogurt in, then repeat for the swirled or marbled look.

Place popsicle tops on mold (or insert popsicle sticks) and place in freezer for at least 4 hours or overnight. TIP: I like to place on a small half cookie sheet pan for stability while transferring to freezer.

How to unmold swirl popsicles

To unmold popsicles, remove from freezer and run silicone mold under warm (not hot) water for about 30-60 seconds, then unmold.

To unmold these swirl popsicles in particular: After running under warm water, pull edges of silicone mold around opening of popsicle to loosen, then hold bottom of mold while turning popsicles counter-clockwise while lifting up.
