These dairy-free, frozen delights are the perfect blend of sweetness and nutrition, providing a guilt-free way to cool down on a hot day.
Bursting with tangy blueberries and creamy vanilla yogurt, these popsicles are a simple and delicious way to stay cool and healthy this summer. So grab your popsicle molds and get ready to learn how to make this scrumptious frozen treat that will have you saying, "More please!" Ingredients
Instructions
- Add all ingredients to a blender or smoothie maker. Start by pulsing a few times, then blend on high for at least 1 minute or until smooth and creamy.
- Carefully pour popsicle mixture into silicone popsicle mold, leaving at least 1/4 to 1/2 inch gap at top for expansion when mixture freezes. If desired, fill 1/4 of the mold with mixture, then dollop some dairy-free yogurt in, then repeat for the swirled or marbled look.
- Place popsicle tops on mold (or insert popsicle sticks) and place in freezer for at least 4 hours or overnight. TIP: I like to place on a small half cookie sheet pan for stability while transferring to freezer.
- To unmold popsicles, remove from freezer and run silicone mold under warm (not hot) water for about 30-60 seconds, then unmold.
Notes
Optional: Use some extra dairy-free yogurt to dollop in molds for a marbled or swirl effect.
TIP: I like to place filled popsicle silicone mold on a small half cookie sheet pan for stability while transferring to freezer.
TIP: To unmold these swirl popsicles in particular: After running under warm water, pull edges of silicone mold around opening of popsicle to loosen, then hold bottom of mold while turning popsicles counter-clockwise while lifting up. It was very easy to unmold mine.
NOTE: I am lactose intolerant, so I choose to make this a dairy-free recipe, but feel free to use regular dairy ingredients in equivalent amounts if you desire.
