Healthy, dairy-free recipe for blueberry vanilla yogurt swirl popsicles. These frozen summertime treats are the perfect blend of sweetness and nutrition, providing a guilt-free way to cool down on a hot day.
1/2cupunsweet vanilla almond milkI used Silk brand
1cupdairy-free unsweetened vanilla coconutmilk yogurt alternativeI used So Delicious brand
1cupblueberriesfresh or frozen
3-5frozen pineapple chunksto sweeten naturally

Instructions
Add all ingredients to a blender or smoothie maker. Start by pulsing a few times, then blend on high for at least 1 minute or until smooth and creamy.
Carefully pour popsicle mixture into silicone popsicle mold, leaving at least 1/4 to 1/2 inch gap at top for expansion when mixture freezes. If desired, fill 1/4 of the mold with mixture, then dollop some dairy-free yogurt in, then repeat for the swirled or marbled look.
Place popsicle tops on mold (or insert popsicle sticks) and place in freezer for at least 4 hours or overnight. TIP: I like to place on a small half cookie sheet pan for stability while transferring to freezer.
To unmold popsicles, remove from freezer and run silicone mold under warm (not hot) water for about 30-60 seconds, then unmold.
