Fig and Apple Cider Bread

A new fall favorite food
As summer draws to a close, you may be wondering what delicious fall recipes to make. The changing of the leaves, the crisp air, and the smell of warm, comforting foods. This fig and apple cider bread is perfect for celebrating the first week of Fall. With it’s sweet warming spices, delicious chunks of apples and figs topped off with a cinnamon orange glaze. It’s a moist bite, not overly sweet and has a very rustic, vintage feel. This bread would be a great accompaniment with a glass of my easy hot apple cider.
Honestly, my favorite way to enjoy figs is straight off the tree. My uncle had a beautiful fig tree that beared fruit at the end of the summer and my brothers and I loved picking them straight off the tree and munching on a few after playing all day with our cousins, or fishing at Grandma’s pond. However, this fall food idea will soon be a family favorite. The end result is a moist, flavorful and rememberable taste of autumn.

Fig Bread Ingredients:

2 cups all-purpose flour

2 tsp baking powder

One 0.74oz individual package of Apple Cider Instant Mix (I use Alpine brand)

1 1/2 tsp ground cinnamon

1/4 tsp ground cloves
-
1/3 cup olive oil
-
1/3 cup applesauce
-
1/2 cup light brown sugar, packed
-
2 large eggs, lightly beaten
-
2 tbsp buttermilk
-
2 tbsp cinnamon whiskey (or substitute apple juice or cider)

1/2 cup chopped apples
-
1/2 cup chopped fresh figs
Cinnamon Orange Glaze:
Glaze ingredients:
-
3 tbsp orange marmalade
-
1 tbsp cinnamon whiskey or apple juice
Optional garnish:
-
4 fresh or dried figs, halved
-
2 tsp honey
How to make fig and apple cider bread
Bread Instructions:
Preheat oven to 350℉ / 176℃ and grease a 9x5x3 inch loaf pan. Line bottom with parchment paper and grease the paper also.
Sift the flour, baking powder, apple cider mix, cinnamon and cloves into a large bowl.
Stir in the sugar until everything is well combined.
Make a well in the center of flour mixture and work in the oil, eggs, buttermilk and cinnamon whiskey (or apple juice) until combined.
Fold in the apples and figs.
Spoon batter into the prepared loaf pan.
For an added garnish:
Brush halved fresh or dried figs with honey.
Press figs, faceup, gently into the batter in an attractive pattern (as shown.)
Bake in center of oven for 45-55 minutes or until a toothpick inserted in center comes out clean or with a few moist crumbs.
Remove from oven, cool in pan for 10 minutes, then turn out bread onto a cooling rack.
How to make marmalade glaze
Glaze Instructions:
Heat the marmalade and whiskey (or apple juice) together in a small pot on high.
Bring to a boil and boil for 1 minute while stirring. Remove from heat.
How to store homemade fig and apple bread
Brush warm glaze over the top and sides bread. Allow to cool completely, then serve or store in an airtight container. Flavors will continue to develop each day.

Counter – Keep bread tightly covered at room temperature for 2-3 days.

Refrigerator – Bread will keep for 5-6 in a covered container in the refrigerator.

Freezer – Wrap the cooled bread tightly in plastic wrap and foil. Place in a freezer bag and freeze for 2-3 months. Defrost overnight in the fridge before bringing to room temperature.

Notes
If you can not find fresh figs, substitute with dry figs.
Apple juice can be used in the place of cinnamon whiskey.
