Fig & Apple Cider Cake

This homemade Fig & Apple Cider Bread is full of sweet warming spices, delicious chunks of apples and figs topped off with a cinnamon orange glaze. It’s a moist bite, not overly sweet and has a very rustic, vintage feel. This fresh fig loaf bread would be a great accompaniment with a glass of my Easy Hot Apple Cider on a cool crisp fall day.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • One 0.74oz individual package of Apple Cider Instant Mix I use Alpine brand
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/3 cup olive oil
  • 1/3 cup applesauce
  • 1/2 cup light brown sugar packed
  • 2 large eggs lightly beaten
  • 2 tbsp buttermilk
  • 2 tbsp cinnamon whiskey or substitute apple juice or cider
  • 1/2 cup chopped apples
  • 1/2 cup chopped fresh figs
  • 3 tbsp orange marmalade
  • 1 tbsp cinnamon whiskey or apple juice
  • 4 fresh or dried figs halved
  • 2 tsp honey

Instructions
 

  • Preheat oven to 350℉ / 176℃ and grease a 9x5x3 inch loaf pan. Line bottom with parchment paper and grease the paper also.
  • Sift the flour, baking powder, apple cider mix, cinnamon and cloves into a large bowl.
  • Stir in the sugar until everything is well combined.
  • Make a well in the center of flour mixture and work in the oil, eggs, buttermilk and cinnamon whiskey (or apple juice) until combined.
  • Fold in the apples and figs.
  • Spoon batter into the prepared loaf pan.
  • For the garnish, brush halved fresh or dried figs with honey.
  • Press figs, faceup, gently into the batter in an attractive pattern.
  • Bake in center of oven for 45-55 minutes or until a toothpick inserted in center comes out clean or with a few moist crumbs.
  • Remove from oven, cool in pan for 10 minutes, then turn out bread onto a cooling rack.
  • Heat the marmalade and whiskey (or apple juice) together in a small pot on high.
  • Bring to a boil and boil for 1 minute while stirring. Remove from heat.
  • Brush warm glaze over the top and sides bread.
  • Allow to cool completely, then serve or store in an airtight container. Flavors will continue to develop each day.
