Iced Coffee Latte Popsicles

Frozen summertime treat with a caffeine boost!

Another 90+ degree hot and humid day here in North Carolina inspired this frozen caffeinated treat to beat the heat. I wanted to satisfy my craving with a delicious and easy homemade treat that’s also low in calories and gives me a caffeine boost. Yes, I’m talking about homemade iced latte coffee popsicles. These customizable frozen delights are perfect for all coffee lovers and I’ll show you how to make your own iced coffee popsicles with just a few simple ingredients and share some flavor variations to keep things interesting. So, get ready to indulge guilt-free in this summertime treat that will leave you feeling refreshed and energized (not to mention very inexpensive to make!) Makes 7 regular sized popsicles.

I choose to make a caramel macchiato latte flavor because that’s my go-to choice for summertime.However, you can easily customize the flavor by using a different flavored creamer. For different flavor possibilities, check out the refrigerated milk/creamer section at your local grocery store. You could make flavors like mocha, sweet cream, vanilla, peppermint, pumpkin spice, toasted hazelnut and more!

Let’s begin!

Ingredients to make iced coffee popsicles

  • 1 1/4 cup coffee, cooled (or you can buy black unsweet cold brew in your favorite brand)
  • 1 1/4 cup milk of choice (I used coconut milk, almondmilk works great also)
  • 1/4 cup coffee creamer of choice (I used Silk dairy-free almond creamer in caramel flavor)
  • Tip: Customize flavor by which creamer you use and adjust amount to sweetness of your liking.

Note: I used dairy-free products because I am lactose intolerant, but feel free to substitute with real dairy ingredients in equal amounts, if desired.

Which coffee is best to use for making coffee popsicles?

It doesn’t matter what coffee you choose to use for the base, but if you brew your own favorite flavor, be sure to cool it down before using.

Tip: If you want to use a powder creamer, add it while coffee is hot to help it dissolve and mix more thoroughly, then cool.

How to make iced coffee latte popsicles

You can add all ingredients to a 3 cup measuring cup and stir together. Carefully pour coffee mixture into popsicle molds, leaving about 1/2 inch to spare at top. Place top on mold and insert popsicle sticks. Place in freezer for at least 4 hours or overnight.

Tip: A spouted measuring cup works best to fill popsicle molds. Find one like I used in recipe card below at end of post.

How to unmold popsicles

To unmold popsicles: Run bottom part of silicone popsicle mold under warm (not hot) water for about 30 seconds, then remove lid and gently lift popsicle out while pushing up on bottom of mold. Silicone molds make popsicle removal very easy. See recipe card at bottom of post for a link to one like I used.

These iced coffee latte popsicles are a low calorie summertime treat that comes in at under 35 calories a pop with only 4 grams of sugar (if you use my same ingredients.) You can customize them however you like and even switch out the milk for a Greek yogurt to make them creamier.
