2-3 lbs skinless, boneless chicken breast1 yellow onion, thick sliced1 cup of your favorite barbeque sauce1/2 cup water1 tsp garlic powder1 tsp smoked paprika1/4 tsp each salt and pepper

Instructions

Mix together barbeque sauce and water in the bottom of crockpot.Thickly slice your onion and place slices in sauce/water mixture in the bottom of crockpot.

Add chicken on top of sliced onions, then sprinkle with salt and pepper.

Next, evenly sprinkle the garlic powder and smoked paprika over top of the chicken.

Secure lid on crockpot and set on low for 8 hours, or if short on time, cook on high for 4-5 hours.

When done, chicken will still have juice around it. Do not remove any juice, proceed to next step.

Using two forks, shred chicken apart. (It will easily shred)Turn crockpot to warm and leave in juice to continue simmering for at least 10-15 minutes to soak up juice, then it is ready to serve.

If you have leftovers, let completely cool, then place individual amounts in freezer safe containers for later use in soups and stews. Can freeze up to 6 months.

Enjoy!
