Banana Nut Healthy Pancakes

If you are looking for a flour-free pancake recipe, then enjoy these Banana Nut Healthy Pancakes guilt-free. These healthier version of pancakes are made with minimal ingredients such as banana, egg, oats, cinnamon and walnuts…that’s it! One bite and you’ll see that these may be healthier, but they are still sweet tasting and delicious, with warm notes of cinnamon spice and a hearty crunch from the nuts, along with healthy carbs from the oats. These Banana Nut Healthy Pancakes make a very satisfying breakfast for one. This recipe will make four 3 ½ inch size pancakes, so double or triple according to servings needed.

Ingredients:

  • 1 ripe banana

  • 1 large egg

  • 1/2 tsp cinnamon

  • 3 tbsp old fashioned oats

  • 1/3 cup chopped walnuts (or pecans)

How to make no flour pancakes

Instructions:

In a small bowl, mash banana and add egg.

Mix together thoroughly.

Next, add cinnamon and oats and mix until will combined.

Let mixture rest in bowl for at least 5 minutes, then stir in nuts and cook pancakes immediately.

Scoop batter with 1/4 cup measuring cup and add to a buttered pan or griddle at medium heat. Cook for 2-3 minutes, then flip and cook another 1/2 minutes until done.

NOTE: They will not bubble on sides like a flour recipe, so look for a golden brown color before flipping.

Serve immediately. If desired, garnish with fresh bananas and extra chopped walnuts.
