These Raspberry Lemon Overnight Oats are the perfect easy and delicious breakfast for busy mornings. Effortlessly put together the night before and left overnight in the fridge, ready for a quick eat. Lemon and raspberry are the ultimate combination to add a bright freshness, along with milled flaxseed, for another healthy addition. Not a cold breakfast fan? …just heat in the microwave for one minute for a warm cozy morning meal. This recipe is for one 10oz (1 1/4 cup) serving size.


Let’s begin!

Ingredients:

  • 1/2 cup old-fashioned oats

  • 1 tsp milled flaxseeds

  • 1/4 cup dairy-free vanilla coconutmilk yogurt alternative

  • 1 tsp raw honey (you can adjust to your liking)

  • 1 tbsp fresh lemon juice (about 1/2 squeezed lemon)

  • zest of 1/2 lemon

  • 1/2 cup fresh raspberries

  • 1/2 cup unsweetened vanilla almond milk

How to make overnight oats

Instructions:

Add all ingredients to a jar or bowl.

Stir to blend all ingredients together, then cover and refrigerate overnight, or for at least two hours.

You can enjoy straight out of the jar or add to a bowl and garnish with extra fruit and lemon zest or a drizzle of honey.

For a warm breakfast, microwave for one minute, stir, and then add desired garnish.

NOTE: I am lactose intolerant, that is why I choose to create a dairy-free version, but if you would like to use real dairy ingredients you can (equal substitution amounts.)
