Peaches n’ Cream Overnight Oats

This Peaches n’ Cream Overnight Oats recipe is inspired for all the people who don’t want to give up Summer! A juicy peach just screams summertime for me. Many ends of summer when I was young, were filled with picking fresh fruits right off the tree after playing, not knowing at the time how lucky we were. My grandmother’s pastures, fields, and in-between chicken houses, dotted with peach, apple and plum trees, loaded with juicy fruit to snack on.

This recipe for overnight oats includes one of my childhood favorite fruits, eastern peaches, along with sweet vanilla and almond flavors to give you a delicious, care-free breakfast you will love to wake up to. Everything is mixed together in a few minutes and put in the fridge overnight and ready to enjoy when you wake up….as easy as THAT!


Let’s begin!

Ingredients:

  • 1/2 cup old fashioned oats

  • 1/2 cup almond milk

  • 1/4 cup vanilla yogurt, dairy-free or Greek

  • 1/3 cup peeled and diced peaches

  • 1/4 tsp almond extract

  • 1 small vanilla coffee creamer, approximately 1 ½ tsp (I used International Delight French Vanilla individual serving)

  • pinch of salt

How to make overnight oats

Instructions:

Add all ingredients to a resealable bowl or jar, then stir together until evenly mixed.

Cover and place in refrigerator overnight or for at least 2 hours, then open and enjoy cold. For a warm treat, heat on high in microwave for 1 minute, stir, then heat for another 45 seconds. Stir and enjoy.

Feel free to garnish with fresh peaches or a little drizzle of honey!
