Salsa inspiration

Recently, some friends of ours visited their relatives in Arkansas and brought us back a beautiful bounty of homegrown tomatoes along with lots of other delicious vegetables. They asked if I had a salsa recipe they could use for all the tomatoes, and I didn’t…. shocker, because my husband LOVES salsa. I thought to myself “why DON’T I have a homemade salsa recipe using fresh tomatoes?? Needless to say, I immediately starting writing down ideas and creating several ones to try, and boy did I hit the jackpot with this one…my favorite! Perfect balance of sweet heat in every bite and super easy to make. Special thanks to our neighbors for the delicious bounty of veggies and the inspiration!

Ingredients to make homemade salsa:

Ingredients:1/2 red onion (medium size), quartered1 chipotle chili along with adobo sauce (add one more for greater heat) Note: I used Goya Chiles Chipotles adobado, canned.1 medium tomatillo, quartered2 garlic bulbs2 tbsp raw honey1/3 cup fresh cilantro1 tbsp apple cider vinegarjuice from one large green lime1/4 tsp ground cumin1/4 tsp sea salt1 lb. ripe tomatoes (roughly 3 med-large tomatoes in size)1 cup canned fire roasted diced tomatoes, drained

How to make homemade chunky salsa

Instructions:

Add all ingredients except for fresh and canned tomatoes to a blender or food processor. Pulse several times until all ingredients are well blended.
Next, add fresh and canned tomatoes (drained) to blender or food processor and pulse until desired consistency is achieved. Note: I wait to add my tomatoes last for a chunky salsa, so I can control the consistency. If you like a thinner salsa, you can add all salsa ingredients at the same time and blender or pulse until well blended.

Serve immediately or can for gifting or enjoying later.How long does fresh homemade salsa last in fridge? Homemade salsa can be safely consumed up to one week if refrigerated.
