Butternut Banana Popsicles

The inspiration for these healthy Butternut Banana Popsicles all started with a gift from Proper Goods: a ready-to-eat butternut squash soup. Although it’s very delicious right out of the pack, I wanted to transform the soup into a refreshing and fulfilling summertime frozen treat, especially since we have been in a heat wave the past few weeks here in North Carolina. I was thrilled to receive the plant-based, gluten-free and dairy-free soup and wanted to add a sweet flavor and added nutrition, so keep reading below for the easy instructions to make healthy popsicles out of soup!

What are the benefits to using probiotic drops?
I use Mary Ruth’s probiotic drops because they are vegan, gluten free, non GMO, USDA organic and has 12 probiotic strains to support your digestive health. Because they are drops, they are easy to take, with or without food or even added to drinks or smoothies. There is no bad taste, it is unflavored.

How to make popsicles out of soup
Ingredients:

(1) 12oz pack of Proper Good Butternut Squash Soup2 large bananas, very ripe1/2 cup of dairy-free vanilla yogurt alternative (I use So Delicious coconut milk vanilla yogurt alternative)1 tsp Origine Organic Vanilla Extract1/2 tsp Origine Organic Ground Cinnamon Optional: 1/2 tsp Mary Ruth’s Organic liquid probiotic drops.You will also need a popsicle mold and sticks. I have found that this silicone one found on Amazon works very well: FIND IT HERE
Instructions:

Add all ingredients to a blender or food processor. Pulse a few times, then blend on high for 40-60 seconds until very smooth.Note: If you do not have a blender or food processor, you can optionally use a hand mixer on high-speed setting. (You may have to blend longer and scrape down sides often.)

Using a pour spout measuring cup, carefully add mixture to each mold, filling till 1/4 inch from the top.

Place lid on top of mold and insert popsicle sticks. Freeze for4-6 hours or until set. Note: If you do not have a mold with a lid like this, let popsicles freeze for 40-50 minutes, then insert sticks and continue freezing.
How to unmold popsicles

When ready to enjoy popsicles, either set out for a few minutes before unmolding, or set mold in a container filled with warm, NOT HOT, water for 15-20 seconds and they should easily unmold. The silicone popsicle mold makes removing them super easy, I would highly recommend having one. (It’s also very easy to clean!)
