Matcha Banana Energy Bites

These no-bake Matcha Banana Energy Bites make a great “on-the-go” or quick snack that provide a little caffeine boost from the matcha along with bananas, dates, almond butter and ground flax seeds assist with beneficial fiber and protein. Easy vegan and dairy free recipe for a great snack to fuel your day.

Ingredients
  

  • 1 cup 8oz dehydrated banana chips
  • 2 tbsp YUM Matcha powder ceremonial grade organic
  • 1/4 cup almond butter
  • 1/4 cup Carrington Farms Organic Milled Flax Seed
  • 2 tbsp Aloha vanilla plant protein powder
  • 5 large dates pitted
  • 1/2 tsp coconut oil
  • 1 cup 8oz allergy friendly semi-sweet chocolate chips

Instructions
 

  • First, add banana chips to a food processor or blender and pulse a few times, then process until small crumbs.
  • Next, add all other ingredients, except coconut oil and chocolate. Process for about one minute or until well blended and small crumbly texture.
  • Scoop mixture out by the tablespoon full and roll into balls. Lay them on waxed paper that is placed on a baking sheet. Chill in refrigerator for at least 10 minutes.
  • In a small bowl, add chocolate and coconut oil and melt according to package directions.
  • Remove matcha balls from fridge and dip each one in melted chocolate, then place on a waxed lined cooking rack or cookie sheet.
  • Optional: If desired, use some extra matcha powder to sprinkle a little on each matcha bite
