Fresh Tomato Blender Salsa

Fresh Tomato Blender Salsa is a quick and easy appetizer made with ripe tomatoes, jalapenos, red onion, cilantro, and spices. This homemade salsa recipe is perfect for dipping, tacos, or topping grilled meats. Naturally gluten-free and easily made vegan, it’s a crowd-pleasing dish ready in minutes.

Ingredients
  

  • ½ cup red onion roughly chopped
  • cup fresh cilantro
  • 2 garlic cloves
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon ground cumin
  • Juice of 1 lemon
  • 1 teaspoon honey or maple syrup for vegan option
  • ¼ teaspoon salt
  • 1 pound ripe tomatoes about 3–4 medium tomatoes
  • 1 10-ounce can diced tomatoes with green chilies, drained

Instructions
 

  • Add red onion, cilantro, garlic, smoked paprika, cumin, lemon juice, honey, and salt to a blender or food processor. Pulse until well blended.
  • Add the fresh tomatoes and drained canned tomatoes. Pulse again until you reach your desired salsa consistency.
  • Taste and adjust seasoning if needed. For a thinner salsa, blend more. For chunkier salsa, pulse briefly.
  • Pour into a bowl and serve right away, or chill in the fridge before serving.
  • Store leftovers in an airtight container in the fridge for up to 1 week.
