Easiest Hashbrown Breakfast Casserole

Easiest Hashbrown Breakfast Casserole is a quick and hearty recipe made with eggs, hash browns, turkey sausage, bacon, and cheddar cheese—no overnight wait required. Perfect for brunch, holidays, or feeding a crowd, this easy breakfast casserole is baked in a 9x13 pan and ready in under an hour.

Ingredients
  

  • 8 large eggs
  • 2 cups milk
  • ½ tsp salt
  • ½ tsp ground black pepper
  • ½ tsp minced onion dried
  • 1 20z bag shredded hash browns
  • 1 9.6oz bag fully cooked turkey sausage crumbles
  • ¼ cup real bacon pieces or bacon bits
  • 1 ¾ cups shredded sharp cheddar cheese

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit (I couldn’t find the special character to insert!) and prepare a 9x13 pan by spraying with non-stick cooking spray.
  • In a medium bowl, whisk together eggs, milk, salt, pepper and minced onion until well blended and a little frothy and then set aside.
  • Next, spread the hashbrowns in the bottom of prepared 9x13 pan, then top with sausage and bacon pieces.
  • Add shredded cheese over top of sausage and bacon and then pour the egg mixture evenly on top of entire casserole.
  • Carefully place casserole in center of preheated oven and bake 38-42 minutes or until cheese is melted and starts to brown a little around edges. Remove and let cool for 5 minutes before slicing and serving.

Notes

Breakfast Casserole Storage: Store in an air-tight container in fridge for up to 3 days.
What type of milk should I use in a breakfast casserole? I used 2% milk in this casserole, but feel free to use whole, skim, or for a dairy free breakfast casserole use a plain oat or coconut milk with vegan cheese.
Suggested options: Top with some green chives, fresh diced tomatoes or sour cream. Serve with some fresh fruit and whole wheat toast for a well-rounded breakfast.
