Carrot Raisin Salad

What a great summertime side dish(or anytime of the year!) Fresh, healthy and delicious and effortlessly put together to enjoy. This Carrot Raisin Salad is my “copycat” version of Chik-fi-la’s. I was so sad to see their Carrot Raisin Salad removed from the menu, so I decided to recreate a dairy-free version.

Ingredients
  

  • 4 cups carrots peeled and grated
  • 1 cup pineapple tidbits in 100% juice or use fresh pineapple
  • 2 tbsp pineapple juice reserved
  • 1/2 cup raisins or 2 small 1 oz boxes
  • 1/2 cup hot water
  • 1/2 cup SO Delicious Vanilla yogurt alternative made with coconutmilk.

Instructions
 

  • Start by soaking the raisins in the hot water for 5-10 minutes.
  • Meanwhile, peel and grate your carrots into a large bowl.
  • Next, drain the raisins and add to your grated carrots, along with the pineapple and yogurt alternative.
  • Mix until evenly combined, then cover and refrigerate for at least one hour to enhance the flavors together.
  • Serve cold.
