Baked Sweet Potatoes

When baked, the natural sweetness of sweet potatoes emerges and it’s full of nutrients and benefits. The texture turns creamy and it's sweet enough to enjoy on its own, but some prefer to top with cinnamon sugar and butter. Use pureed or mashed in a variety of recipes.

Instructions
 

  • Wash your sweet potatoes under cold water. I use a wad of paper towel to give them a little light scrub.
  • Dry sweet potatoes, then poke skin with fork all over.
  • Place on a foil or parchment paper lined baking sheet and start in cold oven. Bake for 1 hour and 15 minutes. (For very large sweet potatoes, bake 15 minutes longer)
  • Turn off oven but leave sweet potatoes in close oven for 15 minutes longer. (set timer, if needed.)
  • Remove from oven and let cool for about 10 minutes.
  • You can use a knife to cut skin and enjoy as is, or easily remove skin and just use the sweet potato meat for casseroles, smoothies, cakes, bread or cookies.
