This simple recipe takes carrots to a whole new level, with a soft, delightful texture and a sweet taste.

Take your carrots to a whole other level with this recipe for Maple Roasted Carrots. With a minimal amount of common ingredients, you will find it’s the perfect way to create this simple but delicious side.

Ingredients:

  • 2 pounds carrots (roughly)

  • 1/4 cup maple syrup

  • 1/4 brown sugar (light brown sugar will give your carrots a brighter color with slightly sweet taste, and dark brown sugar will give a more darker glaze, with a richer flavor-the choice is yours!)

  • 1 tsp salt

  • 3 tbsp butter, cubed (I used a plant based, olive oil butter)

Optional Garnish:

  • sliced almonds (raw or candied)

  • Chopped parsley
