Watermelon Mint Popsicles
Cool down on a hot summer day with these refreshing Watermelon Mint Popsicles. Hydrating watermelon, cooling mint and a delicious burst of blueberries for a delicious frozen summertime treat. - In a smoothie cup or blender, add watermelon and mint flavor syrup and blend together for 30-40 seconds. (If mixture still contains some seeds, you can use a mesh strainer to remove seeds and transfer to a funnel spout cup for easy pouring.)
- Evenly distribute blueberries in the bottom of each popsicle mold.
- Pour watermelon mint mixture into each mold, leaving about 1/4-inch space from top to allow for expansion when freezing.
- Place lids on mold and freeze for at least 2-3 hours or until fully set.
- To unmold, you can set them out for a few minutes to help with unmolding, however a method that I find works best, is to fill up a container to almost the height of the pops with warm (NOT hot) water and let set for about 20-30 seconds.
