Smores mug cake inspiration

Ahh….S’mores! The ultimate trio of crispy graham crackers, rich chocolate and gooey marshmallow! It’s my secret indulgence that takes me right back to my childhood. My dad built a small backyard brick firepit when I was really young. If memory serves me right, it was mainly for us to roast marshmallows on a stick, and even better when we used them for s’mores. It was nice to do on a cool summer night with my family.🥰🍫 This is a huge nod to the classic, but all contained in a big mug, so no mess!

Try this s'mores mug cake today! A single-serving recipe that can be made in the microwave for a quick and easy indulgence. This recipe is for one big mug, so make sure you double or use smaller mugs for two people.

Ingredients to make smores mug cake

Dry ingredients:

  • 4 tbsp all-purpose flour

  • 2 tbsp cocoa powder

  • 1 tbsp sugar

  • 1/4 tsp baking powder

Wet ingredients:

  • 1 egg

  • 2 tbsp butter, melted and cooled at least 1 minute

  • 3 tbsp milk (I used coconut milk)

  • 1/8 tsp vanilla

Other ingredients:

  • 2 Large marshmallows

  • 1 graham cracker, divided into 4 sections

  • a few chocolate chips (about 1 tbsp or less)

How to make smores mug cake for one

Instructions:

Mix your dry ingredients together in a small bowl and set aside. In a separate medium bowl, mix together the wet ingredients until well blended, then add the dry ingredients to the wet and mix just until combined. This will be your cake batter.

The construction is simple, but important in the even baking of the cake and the perfect position of the marshmallow. At the very end of the cake being done, the marshmallow peaks up just perfectly for you to swirl the gooey goodness all around with the other ingredients and dig in! That being said, I included step-by-step photos to show the construction.

Start with a large mug and insert one large marshmallow into the center bottom of mug.

Add about 3 tablespoons of batter in the bottom of mug around the marshmallow.

Add the four graham cracker sections around the marshmallow.

Add the remaining marshmallow on top of the other one and add the rest of the batter.

I added some more graham cracker pieces….just because, but it’s not necessary. I’ve done it both ways, and both ways are great!😉

Sprinkle chocolate chips on top.

Cook uncovered in microwave for 1 minute to 1 minute and 5 seconds, it really depends on the mug. Watch closely after 50 seconds. Let cool at least one minute and enjoy!
